Vege Power Broth




Ingredients

  • 2 celery butts ( or more! ) ( the ends of the celery stalk cleaned and rinsed of dirt and debris)

  • Leftover carrots or carrot ends

  • Leftover onions of onion ends

  • Any other random veggies you have that are on their way out

  • Large stock pot or I use my pasta pot with the strainer

Preparation

  1. This recipe is all about eyeballing your veggie to water ratio, how potent you want your broth etc.

  2. Basically cover your veggie remnants in the pot with water and bring to a boil, turn down and let simmer for 20-40 minutes to create flavor. I like to add bay leaves to this as well, and other fresh herbs but nothing dried and no salt

  3. Once you have tasted and your flavors blend nicely, strain out veggies and divide broth among jars.

Tips

The more celery the better! The combo of celery, carrot and onion on its own cooked down into broth will be a perfect base for all soups. Think chicken noodle without the chicken.

Will keep one week in fridge or one month in the freezer

I love to add fresh basil or parsley into my pot for this broth too along with ginger and garlic.
